The ultimate substitute for bread and the best reach for when you have a snack attack. Best of all – it is soo easy to make.
I seldom eat bread as it plays havoc with my blood sugar levels. I also find it rather dull. Store bought bread is invariably laden with sugar and unhealthy additives. That is not to say that there is not some really tasty and nutritious bread out there.
Remember every meal needs to have a carbohydrate, protein and fat.
I love these treats. They last in the fridge for ages and can also be frozen. Add a bit of imagination and you will have a different toastie every time.
So here goes –
Put a cauliflower in the food processor until it resembles rice.
Add another veggie. I like to add either baby marrow or broccoli but honestly try anything. Whizz it all together in the processor.
Microwave or steam for a few minutes. It must still be crisp and crunchy.
Remove any excess water.
Add grated cheese. As much as you like. I use mozzarella. Remember that your very solid, white cheeses are good for you.
Add a beaten egg, salt and pepper.
Add tablespoon fulls onto a lightly greased baking tray or wax paper. Flatten them into a shape of choice. I go rectangular but round will work.
Bake in the oven at about 180 until crisp.
Allow to cool and enjoy.
Make a sandwich with any filling just as you would with bread. They can even be made into toasted sarnies.
Top with an egg and bacon and some hollandaise sauce for a yummy breakfast.
