Bejewelled Pearl Divers Rice

Carbohydrates such as rice seem to be getting a bad knock lately. However brown and wild rice has many health benefits and mostly importantly will give you a fantastic energy boost. It steadily and slowly releases good sugar into your blood stream so is great for when you need energy for endurance. It also helps with post exercise recovery. This recipe is Bejewelled Persian Pearl Divers Rice and was fed to the pearl divers for energy. Serve as a main course or with fish or chicken and a salad.
30ml butter
1 diced onion
300g cooked brown and wild rice
100g almonds
4 threads of saffron soaked in 30ml boiling water
5ml cinnamon
4 cardamon pods crushed
100g pistachios
100g dried cranberries
Pomegranate rubies
Optional – julienne carrots, spring onion, orange peel.
Melt the butter in a frying pan and cook the onion until soft. Add the remaining ingredients and cook for 3 minutes. Sprinkle with the pomegranate rubies and serve with date and honey jam.
Absolutely delicious and smells incredible.
